Our chef team offers fresh regional cuisine prepared with traditional Mexican flavors. The chef's selection of sustainably caught fish, vegetables, and fruits are inspired by the bounty of the season, and meals are served in the privacy and comfort of your beach home. Our newest addition to Mahayana is a popup Breakfast + Taco Stand, serving breakfast and lunch a la carte for the exclusive enjoyment of property guests. Order at the counter and eat in the comfort of your own home or on the private beach by the sea!
Chef Dinner Menu
Choose one starter per person:
Green salad: mixed greens, avocado, cherry tomatoes, cucumber, orange, walnuts, sesame, drizzled with citrus dressing (option add cured salmon)
Beet Salad: Jocoque, caramelized beets, berries, strawberry vinaigrette, roasted pumpkin seeds, and spinach, with lemon zest + olive oil.
Tuna Black Ceviche: Black sesame, lemon juice, cucumber, serrano pepper, diced tuna, coriander, and red onion.
Passionfruit Aguachile: prepared with shrimp or fish
Guacamole: bright avocado with lime, cilantro and salt.
Choose one main per person:
Vegetarian Tamales: traditional corn husk tamales with roasted vegetables. (V)
Green Risotto: prepared with candied onion, spinach, asparagus, and snow peas. (V)
Yucatan Black Short Ribs: Marinated in black recado 4-6 hours, slow roasted and served on a bed of smashed avocado.
Tuna Tataki: Ahi marinated in ponzu sauce, crusted with black sesame, chili pepper, beet, coriander, avocado with wasabi.
Totoaba - local white fish prepared with roasted tomato puree, pumpkin seed pesto and seasonal vegetables
Salmon Fillet: Salmon cooked at 43°C, carrot puree with ginger and turmeric, pickled fennel, asparagus, snow peas, and seasonal vegetables.
Choose one dessert per person:
Mascarpone Mousse: mascarpone mouse serviced with passionfruit puree, pistachio crumble, mango, strawberries and blueberries.
Mayan Volcano Choc Cake: combining the elements of a cake and a
Drunk Bizcocho: sponge cake with tequila, mescal, chocolate sauce, pistachio crumble and orange cream.
Roasted Pineapple: caramelized pineapple with pistachio crumble, basil cream and strawberries.

In-house chef services are a special offering and provide a wonderful authentic Mexican culinary experience to add to your stay. Our chef team will shop, prepare the food, serve and clean up after the service.
A private in-villa dinner service is $75 USD per person.
Kids 6 and under are free. Rates include groceries and the 16% Tax. Service is subject to availability. Gratuity not included.
